These spicy scrambled eggs make the perfect weekend breakfast

This is one I like to make often. It’s all quite easy and quick to make. You could just serve the eggs on their own as there are plenty of nice flavours to entertain you but I like to serve the with parathas.

Hot freshly grilled parathas filled with these Indian style scrambled egg… it doesn’t get much better than that for a Saturday morning family breakfast.

If you like an extra bit of kick, try sprinkling a few drops of tabasco or similar chilli sauce over it all.

Traditionally the egg is cooked until quite scrambled and hard. I love it this way but my wife likes her eggs a bit softer. This is fine. Just cook the eggs to your desired doneness and enjoy.

Indian Style Scrambled Eggs

Indian Style Scrambled Eggs

  • 5 free range eggs - lightly beaten
  • 2 tablespoons olive oil
  • 2 medium sized onions - finely chopped
  • 2 medium sized tomatoes - diced
  • 2 fresh green chillies - sliced into rings
  • Salt and freshly ground pepper to taste
  • 1/2 teaspoon cumin powder ( I use my own smoked cumin powder which works well here.)
  • 3 tablespoons finely chopped fresh coriander


  1. Heat the oil over medium high heat in a large pan.
  2. When hot but not smoking, add the chopped onions.
  3. Allow the onions to sizzle for about five minutes until lightly browned and translucent.
  4. Now add the diced tomatoes and fry for a further three minutes or so, stirring often.
  5. Add the sliced green chillies and fry for a further 30 seconds and then add the eggs.
  6. Do not stir. Just allow the eggs to coat the bottom of the pan as you would if you were making an omelette.
  7. After about a minute or so, start folding it all together. As you do this the egg will continue cooking until you are happy with the consistency.
  8. Sprinkle with the ground cumin and chopped coriander and serve immediately.
