Hi i have a question , you mentioned that the base sauce has to be doubled up with water when you use it in curries ,, so when the recipe asks for say 300ml of base sauce is that including the water ? So it’s 150 ml base and 150 water ,, or is it 300ml base sauce and add an extra 300ml water on top which equals to 600 ml in total . Many thanks
Dan Toombs says
Yes the 300ml is the diluted amount of base sauce after you have added the water.
Thanks
Dan

Hi Dan,
I have purchased your The Curry Guy Bible and are totaly amazed. Since we got it we cook your curries at least twice a week 😀
My question is: We got a friend who got multiple incompatibilities. Amongst others she cant eat Tomatos, Chillis, and Bell Papper...
However she always loved the smell of your curries and is frustrated that she cant try them her self.
I searched the Curry Bible but did not find a fitting recipie.
Do you think where is a way to anyhow adapt a given recipie taking those incompatibilities into account?
Or is there already a recipie that does?
Many thanks
Chris and Marie
Dan Toombs says
Hi
I am glad you are enjoying my recipes. I would just miss out the ingredients that your friend can't tolerate. It is fine to alter my recipes a bit and to make them your own so you could always add alternative ingredients that your friend enjoys. If they sound good in the curry, they probably are.
Thanks very much.

Hi Dan love your book the curry bible.
My quests do you think you could cook your chicken korma in a slow cooker.

Hello Dan,
Thank you for all your great recipes! I recently purchased The Curry Guy Veggie and I was wondering how you get the yellow split peas soft when you fry them dry before adding them to the rest of the ingredients? I made the yellow split pea chutney but the split peas remained too hard to enjoy the chutney. Blending them did not do the trick.
Thank you so much. I have to cook for a big group soon and I love using your book for all of the recipes.
Kind regards, Sabine

I am really sorry but I am away from home at the moment and I don't have a copy of the book. All the recipes were tested so it should work but I will check when I am home in 2 weeks and get back to you if that is OK.
I am really glad you're enjoying the recipes so hope you can get this one right.
Thanks
Dan

Hi,
I bought your ‘Curry Guy’ app (on iPhone). iPhone put apps to ‘sleep’ when they haven’t been opened for a while to save room on your device. When you the go to use the app it has to be downloaded. This happened with yours. When I came to use it again it wouldn’t download saying it is no longer in App Store. Can anything be done? It seems unfair as I paid for the app.
Thank you
Dave Ward

I am afraid the company who developed the app have gone out of business. It apparently still works but it is not possible to re-load. All my recipes and many more are available here for free

I am planning on making the chicken Jalfrezi from The Curry Bible. I have made the base sauce. When making the chicken stock can I freeze the cooked chicken to use next in the Jalfrezi. Thank you in advance.

Dan Toombs says
Yes you could definitely freeze it. The base sauce freezes really well too.
Thanks very much.

Dan, I feel so blessed to have found your "secret-sauce"
I was lucky enough to have a Bangladeshi business-partner for a while, whi did his best to try to teach me the basic principles of cooking curries. He was already the pioneed of the now-huge genre of "curry kits" when he created "Cook by Numbers", but sadly he died before it became mainstream and now there are innumerable copies.
It is also sad that I never paid attention to the lessons!
So it is with huge appreciation that I found your work, which brings the hereto "secret sauce" of curry-making to a wider audience.
I cannot express how grateful I am, but you, my friend are a gift from heaven,
Many, many, many thanks...... B
Dan Toombs says
Thank you so much. It certainly sounds like you were taught the basics well and that stirred your passion!
