As tandoori dishes go, this tandoori cod is quick and easy!
I love experimenting with flavours. It is especially fun to do with fresh seafood. You don’t want to overpower the fish but a nice zing is always nice.
Today I had some fresh cod on hand and decided to do just that.
It was raining outside so firing up the tandoor oven was out of the question. I had to make up for the lack of that beautiful smoky tandoor flavour with a few extra herbs and spices without making the fish taste like on big coriander leaf.
The following recipe was the result.
It went down so well. Even my oldest daughter who isn’t all that crazy about fish loved this tandoori cod!
As you can see from the picture, I served it with some pickled cabbage and a few dabs of chilli chutney. What a beautiful combination!
