These Peanut Butter Noodles with a kick of chilli and garlic are sure to become a regular favourite for a quick and easy dinner!
Craving a quick and delicious meal after a long day? These Peanut Butter Noodles with garlic and chilli are the perfect solution—ready in under 10 minutes and easily adaptable for one or four!
Crafted with ingredients you likely have on hand like peanut butter, soy sauce, chili flakes, instant noodles and fresh garlic. These noodles are perfectly complemented by a garnish of spring onions for a burst of freshness.
What type of noodles do you use for this Peanut Butter Noodle recipe?
For this Peanut Butter Noodle recipe, I highly recommend using instant noodles. They’re conveniently portioned, budget-friendly if you avoid the top brands and often something you already have in your cupboard.
This makes it easy to adjust the recipe to serve just one person by using a quarter of each ingredient amount, or to make more by using additional noodle packets and adjusting the ingredients accordingly.
You can also substitute with ramen or egg noodles; simply follow the same instructions and use the same quantities as you would for instant noodles.
Can I store the leftover Peanut Butter Noodles in the fridge for later?
Yes, the Peanut Butter Noodles can be stored in the fridge. However, I recommend only mixing the amount of noodles you plan to serve with the sauce.
Store any leftover sauce separately in the fridge for up to 3-4 days. Let the sauce cool completely before refrigerating.
When you’re ready to eat the leftovers, you can either reheat the noodles and sauce together or cook fresh noodles and toss them with the chilled sauce, which will warm up from the hot noodles.
What if I wanted just one portion and not four?

- 1 tsp sesame oil
- 1/4 tsp chilli flakes
- 1/4 tsp salt and pepper
- 1 spring onion (scallion)

- In a separate pan, heat the vegetable oil over medium-high heat. Add the garlic and half of the spring onions, cooking for 30 seconds. Stir in the peanut butter and bring the mixture to a gentle simmer.
- Combine the sauce with the noodles and serve hot, topped with extra spring onions (scallions) and chilli flakes. Enjoy delicious Peanut Butter Noodles!
Can you use chicken or vegetable stock made with stock cubes?
For this recipe, I used chicken stock using stock cubes. It was convenient and that is what this recipes is all about: convenience and of course flavour.
When I have it on hand, I do prefer homemade stock like this Chinese chicken stock. If you want a vegetarian option, just leave out the chicken and add more of the veggies.
Make these Peanut Butter Noodles your own…
Make this recipe your own with a few simple tweaks! Swap out peanut butter for almond or cashew butter for a different nutty flavor. Adjust the chilli flakes to your taste—add more for extra heat or reduce for a milder kick.
Feel free to mix in your favourite veggies, like bell peppers or snap peas, for added crunch and nutrition. This quick and easy Peanut Butter Noodles recipe is fully customisable, so get creative and make it perfect for you!
