For the most part, you will find them to be very authentic. These are all recipes I learned on my travels researching for my different cookbooks. In some cases, I needed to change them a bit so that you can make them at home without having to source difficult to find ingredients.
That said, you will also find information about the traditionally used ingredients should you wish to source them.
