What are Masala fries?
Can you make this Masala Fries recipe your own?
I sure did! For an extra kick, I added freshly chopped garlic and chili in the last two minutes of cooking and it made all the difference. Please use the following Masala Fries recipe as a guide, but feel free to tailor it to your personal taste. Want more heat? Add extra chili powder! The recipe is in your hands, and since you’re the one enjoying these flavourful fries, take the time to taste and adjust until they’re just right for you.
What type of fries?
You can use a variety of frozen fried or chips for this recipe and they’ll all turn out great! I used straight cut fries in this recipe. This recipe simply asks you to cook the fries according to the frozen packet instructions, so feel free to pick your favourite! Here are some options:
- Straight-cut fries: Classic, thin and crispy.
- Crinkle-cut fries: Adds extra texture to hold onto the spices.
- Steak-cut fries: Thicker and great for soaking up all the masala flavours.
Do I have to use frozen fries?
Absolutely not! If you prefer to make your own homemade fries, you can certainly use them in the air fryer for this Masala Fries recipe.
However, keep in mind that cooking times and temperatures might vary depending on the thickness and type of fries you prepare. Be sure to adjust the cooking settings as needed to achieve that perfect crispy texture.
Keep an eye on them and check frequently to avoid overcooking or burning.
Can I reheat the leftover Masala Fries and still achieve a crispy texture?
Yes, you can reheat leftover Masala Fries and still achieve a crispy texture with an air fryer. The air fryer is great for reviving leftovers because it helps restore the fries’ original crispiness without making them greasy.
Simply preheat the air fryer, then reheat the fries in a single layer at 175°C (350°F) for about 3-5 minutes, shaking the basket halfway through.
What dipping sauces go well with Air Fryer Masala Fries?
Indian chutneys like mint, coriander and mango chutney, tamarind chutney, or yogurt-based sauces are great options for dipping your Air Fryer Masala Fries. Try any of these sauces:
- Red Onion Chutney – Curry House Style
- Tomato Chutney – Indian Roasted Tomato Recipe
- Coconut and Chilli Chutney
- Coriander & Coconut Chutney
- Coriander Chutney – Cilantro and Mint Chutney
- Green Chilli Chutney
- Pakora Sauce
- Yoghurt Sauce – Chilli Raita
Pro Tips:
Add Fresh Ingredients at the End: To avoid burning, add fresh ingredients like garlic and chili during the last two minutes of cooking. This way, they’ll infuse their flavour without becoming overly crispy or burnt.
Cook in a Single Layer: For the crispiest fries, spread them out in a single layer in the air fryer basket. If you have a lot of fries, you may need to cook them in batches. Don’t worry—combine them all together for the last two minutes of cooking to ensure everything is warm and evenly coated with the masala.
Adjust Cooking Time for Homemade Fries: If you’re using homemade fries, be mindful that cooking times may vary compared to frozen fries. Keep a close eye on them, adjusting the time and temperature as needed to get them crispy without burning.

Masala Fries (Air Fryer)
Ingredients
- 2 handfuls of frozen fries (roughly 350g)
- 2 tbsp rapeseed oil
- 2 tsp chilli powder
- 2 red bird's eye chillies
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garlic powder
- salt to taste
- TO FINISH
- 3 garlic cloves, minced
- 2 - 3 red bird's eye chillies, finely chopped
- 1 tbsp freshly chopped coriander
Instructions
- Start by preheating your air fryer to the temperature recommended on the fries packaging. SEE NOTE
- Place the frozen fries in a bowl and coat them evenly with a bit of oil. This helps the spices stick to the fries and ensures a crispy texture.
- Stir in the cumin, chili powder, coriander, salt and garlic powder. Mix well to ensure each fry is evenly coated with the spice blend.
- Arrange the seasoned fries in a single layer in the air fryer basket. Depending on the size of your air fryer, you might need to cook them in batches. Follow the cooking time recommended on the packaging, but subtract 2 minutes from the end of the cooking time.
- If you cooked the fries in batches, combine them all in one air fryer basket, ideally in a silicone container or similar. Add the chopped garlic and chili and stir them in. Cook for an additional 2 minutes to eliminate the rawness of the garlic and chili.
- Serve the Masala Fries hot and top with fresh coriander (cilantro). Enjoy your flavourful, crispy snack!
Notes
Most frozen fries now come with specific air fryer instructions on the packaging, making it easy to follow. If your fries don’t include air fryer guidelines, a good rule of thumb is to set your air fryer to 200°C (400°F) and adjust the cooking time as needed.
