This air fryer lamb rogan josh is one of my first curry experiments in my air fryer. I’m happy to say it worked incredibly well. I used tender chunks of air fryer tandoori lamb tikka that were so good in the curry.
The tandoori lamb tikka also happens to be a great way of pre-cooking meat for more traditionally cooked curry house style curries.

Air fryers are like little tandoors and whenever you have a good amount of heat, you can cook a great curry. To prepare this curry, you air fry sliced onion, bell pepper and garlic and ginger paste. This is then blended with other sauce ingredients.
The sauce is then heated in your air fryer with pieces of tandoori lamb tikka in a suitably sized metal pan.
The end result tastes just like it was cooked in a pan but with a lot less mess!
The information you find below will demonstrate how you can use your eco friendly air fryer to make this amazing rogan josh without a pan. I spent a lot of time getting this just right. I bet you can’t taste the difference between this and more traditional ways of cook the curry!
What do you use as a pan for air frying a curry?
All you need is a metal cake tin or another metal pan that fits into the cooking basket of your air fryer.
Small cake tins are already popular accessories for air frying casseroles and stews. I use this one which comes in several sizes. For my air fryer I use a 7 inch diameter pan but you will want to measure your basket before placing an order.
If you have another suitably sized metal pan, that will work too.
Although cellophane pans have their air fryer uses, I don’t recommend them for cooking curry as they do not get hot enough to cook a curry quickly.
Will this recipe work in any air fryer?
I have now tried my air fryer curry recipes in several different air fryers and each worked really well.
I personally have a Ninja Foodie FledDrawer Air Fryer (<– Affiliate Link) which I love. It has two cooking chambers so I can air fry two different things at once which greatly reduces the cooking time.
I have used smaller air fryers with fantastic success. The cooking time below is for an air fryer with a single cooking chamber so if you have two or more, you will be able to cook these curries faster.
Can you work ahead?
Yes! You can prepare this air fryer curry up to 3 days ahead of time if you want to. As it sits in the fridge, the flavours will develop and it will be even better when you serve it.
You can also work in stages. Air fry the onions, bell pepper and garlic and ginger paste and place it in the fridge until you are ready to complete the curry, for example.
If you like, you can make and blend the sauce or pre-cook the lamb tikka. Whatever is most convenient for you, do it.
Safety notice.
Air fryers were not developed to cook curries, soups and stews. You should never heat only water or stock on its own in an air fryer.
As the liquid comes to a simmer, it can splatter and also steams. This can ruin your air fryer and/or make a mess. It can also be a fire hazard.
This air fryer rogan josh recipe was developed with this in mind. You don’t need a lot of sauce for a curry that serves 1 to 2 people.
Heat the sauce for 10 minutes. It will probably still not be boiling hot and spitting. Keep a close eye on it though as you continue to cook. If the curry begins to steam a lot or spit, cover it tightly with foil or a lid to finish cooking.
I have honestly never needed to do this as the curry is ready to serve before it starts spitting.
How long can you store this air fryer rogan josh in the fridge?
You should be able to safely store your rogan josh in the fridge for up to 3 days.
If you have a reheat option on your air fryer, you can reheat the curry that way. You could also simply air fry again at about 200°C/400°F until hot. That or throw it in your microwave.
Can you freeze this curry?
Yes and it will freeze well for up to 3 months.
To reheat it, just let it defrost and reheat as you would the refrigerated curry above.

When should you add curry paste?
I would never recommend making a curry using a shop bought curry paste. I do, however sometimes use Kashmiri paste as a seasoning.
This is totally optional but a teaspoon or so added to a curry sauce can often liven it up and make it really good.
By the way, I do not work for Patak’s. It’s just what I had in my cupboard. Any Kashmiri paste will do.

Air Fryer Lamb Rogan Josh Curry
This lamb rogan josh recipe calls for precooked lamb tikka. If you do not want to make that, you could cook some lamb in your air fryer at 200°C/400°F in the cooking basket for about 20 minutes instead. You will need a small metal pan such as a cake tin that fits into your air fryer basket. I use this one <-- Affiliate Link. If you have an air fryer with two cooking chambers, you can cook two things at once which will greatly reduce the cooking time.
Ingredients
- 300g (10.5oz) tandoori lamb tikka
- FOR THE SAUCE
- 2 tbsp rapeseed (canola) oil (optional) or oil spray
- 2 medium onions (approx. 250g/9oz), thinly sliced
- 1 red bell pepper, cut in half, seeks and membrane removed
- ½ tsp salt
- 1 tbsp garlic and ginger paste
- 1 tbsp mixed powder or curry powder
- ½ tsp Kashmiri chilli powder
- ½ tsp ground cumin
- ½ tsp ground coriander
- 1 ½ tbsp paprika
- 5 cashews
- 150ml (1/2 cup) passata
- 250ml (1 ½ cups) warm meat stock, stock cube stock is fine
- TO FINISH
- 2 tbsp plain, natural yoghurt
- 1 tomato, quartered or 10 cherry tomatoes, halved
- ½ tsp kasoori methi (dried fenugreek leaves)
- ½ tsp garam masala
- 2 tbsp coriander (cilantro), finely chopped
- ½ small red onion, finely diced
- Salt to taste
Instructions
- Preheat your air fryer to 200°C/400°F. Place the sliced onions, bell pepper, oil and salt into a mixing bowl. If you are on a reduced calorie diet, spray with cooking oil to coat and mix it all up well.
- Pour it all into the cooking basket to fry for 10 minutes, stirring half way through. Carefully spread the garlic and ginger paste over the veggies for the last two minutes and then pour it all back into your mixing bowl.
- Add the remaining sauce ingredients to the bowl and then blend with a stick blender or countertop blender until smooth.
- Pour the blended sauce into a small cake tin or other suitable metal pan that fits into your air fryer and place it in the basket to air fry for 10 minutes.
- After 10 minutes, the sauce will be warm but not really hot. You will notice that it has browned some on top and that is flavour so stir it in. Add the precooked lamb tikka and continue cooking for another 5 minutes, by which time the sauce should be bubbling hot.
- If the sauce is spitting or steaming a lot, cover the pan with a lid or foil for the remainder of the cook. At this stage you might see some caramelisation around the edges of the sauce. Stir that in for additional flavour.
- Once the sauce is good and hot, stir in the yoghurt, kasoori methi (dried fenugreek leaves), garam masala and push the tomatoes deep into the sauce. Continue air frying for another 2 to 5 minutes or until the curry is hot enough to serve.
- Season with salt to taste and garnish with the chopped coriander (cilantro) and diced onions.
