In this section you will find my recipes for some of the most popular raitas on the planet.

These aren’t only famous raitas in the Indian Subcontinent but at the thousands of curry houses around the UK and the rest of the world.

How do you serve these raitas?

You could just serve them as they are at curry houses with a selection of poppadoms. There are many other ways to serve a good raita though. Try slathering some over a biryani or curry.

You could also use them as a dip for chicken or meat seekh kebabs or with your onion bhajis and samosas.

Is it important to stick to the recipes?

Absolutely not! Use these raita recipes as a guide but feel free to spice them up with additional spices or add fresh herbs even when not called for in the recipe.

How do you get the best results?

Taste them as you prepare them! Add salt and lemon or lime juice to taste. If you find your raita is too thick, try stirring in a little milk. Add milk in small amounts until you are happy with the consistency.
