Chilli roasted Pistachios anyone?
These chilli roasted pistachios just plain gets it!
Great for picnics or snacks you can’t go wrong with this easy dish so I really hope you give it a try.
Once made, they keep for months in an air-tight container in a cool and dark place. I usually quadruple this recipe for that reason.

The spicy and savoury ingredients would work with almost any type of nut but I really love the flavour of these chilli roasted pistachios together with the tangy lime.
It works so well with the natural sweetness of pistachios. Plenty of salt is also a good thing. At least for your taste buds!
I purchase unsalted pistachios. If you can only find salted pistachios, leave the salt out of the recipe and add it at the end.
To shell or not to shell?
I like these both with the shells on or shelled.
If I'm cutting back on the calories, I leave them in the shells. It's more work and they are also cheaper to purchase that way.
If you really want to go for it though, buy your pistachios shelled. Yum!
That's how I usually do it.
Where is this roasted pistachio recipe from?
I'm not even sure if it's Indian as I've never seen them served there. I first tried roasted pistachios like this at a curry house in Darlington.
They were so good and the perfect start to the meal. I think the chef there added a little honey to his roasted pistachios too but I like this recipe as is.
If you want to add a bit of sweetness, honey roasted pistachios are very good. Just add about 2 tsp honey to the following recipe.
Getting this recipe right.
When you first take the roasted pistachios out of the oven, they may not be as crunchy as you are expecting.
That's ok! This recipe works. Just let them cool slightly and they will be deliciously crunchy.
Once you try the recipe, however you might like to try other variations. The main part of this recipe is the roasting time, add what you like.
Rosemary is awesome, pounded and then added to the marinade. So is black pepper! You might also like to adjust how much chilli powder you use.
Taste and adjust is what I always say.

How to make Chilli Roasted Pistachios

Ingredients
- 2 cups pistachios
- 1/2 fresh lime
- 1 tablespoon olive oil
- 1 tablespoon red chili powder
- 1 tablespoon garlic powder
- 1 teaspoon salt
Instructions
- Preheat your oven 175°C (350°F).
- Whisk together lime juice, olive oil, chili powder, salt and garlic powder. Stir in pistachios to coat evenly.
- Spread the nuts over a baking tray.
- Roast on the middle rack for about 20 - 30 minutes or until the spice mixture has dried on the nuts or shells.
- The aroma in your kitchen will be amazing as they roast.
- After about 30 minutes, remove the nuts from the oven. The nuts will get more crispy as they cool.

@Dan Toombs, I used salted roasted with shell on and did 18 minutes and they look burnt. Any advice? I didn’t add more salt to the recipe since they were pre salted.
